It's not too late to make your Christmas Cake!
Here is how!
Ingredients
225 g butter
225 g sugar
1 can of 425g crushed pineapple
450 g plain white flour
3 eggs
1 small cup of milk
1 tsp of baking soda
1 tsp of baking powder
1.5 kg mixed dried fruit
1 teaspoon of ground cinnamon
140g of toasted almonds, chopped roughly into pieces
5 tsp golden syrup
2 tsp vanilla essence
5 tsp rum
Double-line a 23cm cake tin with baking paper
Method
Turn oven on to 135 °C
In a large mixing bowl place, all the ingredients except (milk butter, and baking soda). Heat milk with butter until the butter has melted, once the butter has melted remove the pot from the stove and stir in the baking soda, then pour this over the rest of the ingredients and mix until combined. Pour the mixture into the prepared baking tin. Place in the oven for 3.5 hours, or until the cake has cooked in the center.
