Chilli Prawns with Avocado Cous Salad and homemade thousand island dressing




Dressing Ingredients

  • 5 x Tablespoons sweet chili sauce

  • 1 cup of mayo

  • One small red onion finally diced

  • 3 tablespoons of tomato sauce

  • 1 tsp of vinegar

  • 1 tablespoon of oil

  • Salt and Pepper

Mix all the ingredients together and place in the fridge.


Chilli Prawns

  • 1 x 500g of Raw King Prawns (defrosted)

  • (Making sure you clean the prawns, remove any shell, and the vein that runs down the back)

  • Or you can used already cooked prawns that are cleaned and ready to go.

  • 25 g butter

  • 3 crushed garlic gloves

  • ¼ cup of sweet chilli sauce


Method

  1. Place butter in the pan with garlic for 1-2 minutes on low, then add the prawns. Season with a little salt and pepper, then pour over the sweet chilli sauce. Reduce until sticky.

  2. Make Salad; 1 x Baby Cos Salad washed and drained, 1 x Pkt of Cherrie tomatoes, 1 x Pkt of chives chopped, 3 x Large avocado’s diced, Juice of one lime or lemon

  3. Place the washed Cos Salad on a platter. On each leaf, place small pieces of the Cherrie tomatoes, avocado and prawns over top. Squeeze the lemon juice all over and use any remaining sauce from the pan, by drizzling over the top.

  4. Finish the dish with spoonful’s of the homemade thousand island dressing and garnish with the chopped chives.
