Simple but so tasty
Fresh asparagus salad with lemon Dejon mustard oil dressing
2 x Bunches of fresh asparagus chopped
3 x Spring onions diced
Juice of one lemon
Olive oil
Salt and Pepper
Mix salad leaves washed and dried.
Oil dressing
¼ of a cup of olive oil
Juice of one lemon
Rind grated of one lemon
1 tablespoon of Dejon mustard
Slat and Pepper, mix in a jar, and set to one side.
In a container with a lid, place the diced spring onion, boil a jug and pour over some hot water, place the lid on the container and allow to sit for 15 minutes.
Remove and drain the water and mix in the spring onion along with the juice of one lemon and some salt and pepper.
Place the washed salad leaves onto a platter and pour the asparagus over the top.
Then drizzle the salad dressing over the top, you can keep the salad dressing that is left over in the fridge for a few days.
