6 x Beef or Pork Sausages
Dash of olive oil
1 onion diced.
3 carrots diced.
1 capsicum sliced thin.
300 grams of mushrooms diced.
1 apple grated.
2 cups of beef stock
3 tablespoons of tomato sauce
5 tablespoons of BBQ sauce
Salt and Pepper
2-3 teaspoons of corn flour mixed with 5 tablespoons of water set aside.
Method
Pre-heat oven to 180oC
Heat a transferrable pan, add a dash of oil, and cook the onions carrots for a few minutes with some salt and pepper. Add in the capsicum mushrooms and apple and cook for a few minutes. Add the stock, BBQ Sauce Tomato sauce and simmer on low for approx. 3 minutes, then mix the corn flour. Place the sausages on top and pour over some of the sauce. Place in the oven to cook the sausages through for 30-40 minutes until the sausages have turned golden. Serve with some mash potatoes!
