Zesty Prawn Salad!

Ingredients:

  • 500g cooked and peeled prawns

  • 2 ripe avocados, diced.

  • 1 small cucumber, diced.

  • 1 cup cherry tomatoes, halved.

  • 1/4 red onion thinly sliced.

  • 1/4 spring onion diced.

  • ½ red capsicum diced

  • Juice of one lemon or lime

  • Salt and pepper

  • For the dressing:

  • 1/4 cup mayonnaise

  • 2 tablespoons ketchup

  • 1 tablespoon lemon juice

  • 1 teaspoon Worcestershire sauce

  • Handful of capers diced small

  • ½ red onion diced small

  • 3 tablespoons of olive oil

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the prawns, diced avocado, cucumber, cherry tomatoes, sliced red onion, and chopped coriander.

  2. In a small bowl, whisk together the mayonnaise, ketchup, lemon juice, and the rest of the ingredients.  Mix the dressing through the prawns.

  3. Place the prawns on some yummy lettuce leaves, optional!
