Ingredients:
500g cooked and peeled prawns
2 ripe avocados, diced.
1 small cucumber, diced.
1 cup cherry tomatoes, halved.
1/4 red onion thinly sliced.
1/4 spring onion diced.
½ red capsicum diced
Juice of one lemon or lime
Salt and pepper
For the dressing:
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
Handful of capers diced small
½ red onion diced small
3 tablespoons of olive oil
Salt and pepper to taste
Instructions:
In a large bowl, combine the prawns, diced avocado, cucumber, cherry tomatoes, sliced red onion, and chopped coriander.
In a small bowl, whisk together the mayonnaise, ketchup, lemon juice, and the rest of the ingredients. Mix the dressing through the prawns.
Place the prawns on some yummy lettuce leaves, optional!
